Can you believe after living in Texas for 30 some years I have
never made chicken and dumplings. It is
true and honestly it never occurred to try because I am not a born and raised
southern cook.
But Robert’s birthday was over the weekend so I decided it would be fun to surprise him with chicken and dumplings. He was surprised and when I asked him, compared to his mom’s recipe how were they he said, “almost as good as moms with more chicken.”
Robert is always honest and his response made me smile. That was high praise so we should dive into this good and easy recipe because I have no doubt you will want to make your own later this week.
Ingredients & Cooking the Chicken
- 5 chicken thighs (remove skin)
- 32 oz. of chicken stalk
- 1 cup half and half
- Salt and pepper to taste
- A little flour
- My biscuit recipe here
In a soup pot add chicken thighs and stalk and bring to a
calm boil for about 20 minutes or until chicken is cooked. Remove the chicken and let it cool and turn
the heat down or even off.
In a small dish add half and half with salt and pepper, then add just enough flour until it thickens then let it sit to the side.
After the chicken cools remove the meat from the bone and prepare to make biscuits.
Make
biscuits according to my recipe here. After cutting your log into slices then cut each one into fours and roll them into a bed
of flour so they are coated and set aside.
Bring Biscuits and Chicken Together
Return to the chicken stalk and raise the temperature to a
medium boil, then add the half and half mixture and stir for a minute before
adding the meat. When it returns to a boil, slowly add each dumpling into the pot then turn the heat down to medium and cover
to cook for 25 minutes.
When cooked, turn off the heat and let cool for 5 or 10 minutes before serving. Wasn’t that easy?
