Instant Pot Parmesan Spice Chicken

We’re going to dive right into this Parmesan Spice Chicken recipe because it’s quick, easy and tastes amazing. I’m big on serving protein but you could easily serve with a salad, rice or a baked potato.
If you like easy, then this is your "new" go to recipe. 

If you don’t have an instant pot, then I’m sure you could do something similar on the grill or spread out in a baking dish and cook in the oven.

Another notation, I used infused olive oil, but a simple house blend would also be nice.  Flavors like, chive, garlic or onion make it even more tasty.

I also double up the amount of chicken thighs, so we have lunch leftovers the following day.

Prep recipe in layers using chicken thighs

Parmesan Spice Chicken Ingredients

      • 8 or 10 chicken thighs (remove skin)
      • Chive infused olive oil
      • My homestead blend Spice mix
      • Fresh grated Parmesan
      • Fresh herbs if desired (I used basil but it’s not necessary)


Prepping for Instant Pot Cooking

Line the bottom of the instant pot pan with a layer of chicken thighs and lightly drizzle olive oil over the top followed by a nice sprinkle of spice mix. 

Repeat with the second layer and then close the instant pot lid, press high pressure and set the timer for 10 minutes. When the 10 minutes is up, release the steam and remove the lid.

Serve by dishing out two or three thighs on a plate and sprinkle with fresh parmesan and herbs.
That’s all you do; the meat is incredibly moist and it’s so good.
