Tasty Chicken Italian Salad


Quick healthy salad that offers that italian zing flavor with chicken

I enjoy tossing ingredients together, the hope is a new dish is created and you will want to make it.  That recently transpired in my kitchen after cleaning out the fridge to make this tasty Chicken Italian salad. 

I came up with this wonderful salad in minutes, the trick was I had a leftover roasted chicken breast and some baby greens that by themselves there was no hope.  Together with a few additional ingredients I had something amazing. 

My Italian roots always surface when I'm in the kitchen and after the first taste my thought was, I wish my grandma could taste this one. I always miss her, especially this time of year. I’m reminded often she’s in my heart and it’s like we are always cooking together.  I love that!

When I cook, remember I don't always measure because I bring a little bit of this and that together and try to have fun when I'm cooking.  Which means, you may need to adjust this a tad to make sure it's to your liking.  You are seeking "flavor and moist" so any adjustments will come from seasoning and olive oil.

Also, I don’t normally use avocado when cooking Italian unless it’s in a salad.  You could change that out with mushrooms or Roma tomatoes if desired.


A quick list of ingredients to make this awesome salad.

Chicken Italian Salad Ingredients

    •  One large chicken breast chopped in pieces (2 if smaller)
    • 1 avocado chopped.
    • ¾ Cup (handful) chopped Baby greens like spinach, arugula radicchio or chard
    • ¼ Cup Parmesan
    • 1 Tbsp.  Homestead Blend Mix
    • Drizzle or swirl with Garlic Flavored Olive Oil


Prep Salad and Serve

Get a bowl large enough to hold and mix all the ingredients and combine your chicken, greens, avocado parmesan and homestead blend herb mix.

Drizzle olive oil around the top about three or four times and carefully fold everything together.  Do this lightly to not bruise or overhandle the avocado.  At this point taste, because you may need more olive oil or seasoning before serving.

I let mine sit in the fridge for 20 minutes before serving so the flavors join and then serve for lunch. This would be nice with a croissant or if I was really ambitious some homemade bread.
