It’s that time of year when I crave berry flavored
muffins. I started dreaming about the
ingredients and since we are in the month of February, I was also thinking red.
So, I came up with something healthy, the raspberry muffin with honey. How could this possibly be healthy? Well because you won’t find sugar in the list of ingredients.
The beauty of this muffin recipe is that you can taste
all the flavors.
To begin, preheat the oven to 350 degrees.
Ingredients & Steps
In a large bowl begin with the dry ingredients and slowly
add everything else except for the honey and raspberries. Mix with a wooden spoon or spatula until blended then add the
last two ingredients and lightly fold everything together.
If you use frozen berries the mixture will thicken, nothing is wrong just keep moving forward by dropping batter to the rim of each silicone liner. Bake at 350 degrees for 25 to 30 minutes.
Let the muffins cool before removing from liners and store however you desire.
I use my vintage glass covered
dessert tray because it's pretty. Sometimes if that's occupied, I like to use these
