We recently had an entire week where most of our time was spent working outdoors. I knew it would be humid, so I wanted to make
sure we had some healthy snacks already prepared.
When you think of East Texas imagine extreme humidly from May through September. We experienced mornings and evenings when it felt like we were melting from the sweat pouring down our face.
A tasty trail mix with a glass of ice water was a great choice to reset and keep our energy steady. I chose to make our own healthy snack for two reasons; they always taste better and cost less than the already prepared.
This healthy snack is like a trail mix using three ingredients and just minutes to make. Keep in mind this recipe can also be made with dried
blueberries, craisins or raisins. The measurements will be the same as
what I used for the apricots.
Shopping for Ingredients
- 10 oz. Southern Grove Pecan halves
- 6 oz Southern Grove Pistachios shelled roasted with sea salt
- 1/2 cup Dried apricots
These ingredients came from Aldi, if you have a location
nearby give them a try. They offer fresh
quality food, great prices and a quick shopping experience.
What I like most about this grocery store, they are focused on serving quality over quantity. I find when you simplify, shopping quick is the result. Normally, I can select a months’ worth of food items in under 20 minutes.
Bring Ingredients together
To bring this recipe together take a sharp knife and chop the apricots into bite small size pieces. Then add all three ingredients into a medium size bowl and fold with a spoon.Pour the mixture into a container and enjoy as a quick snack in between meals to keep your energy up.
