I have several blueberry muffin recipes, but they are simply too sweet. So, I decided to come up with one that would be healthy and bring out the natural flavor of blueberries.
Many muffin recipes add sugar and a lot
of sugar at that. If you buy muffins at the bakery or grocery store, they are
loaded with sugar unless you choose “sugar free” and let me just say, no thank
you!
I wanted to come up something that was healthy that also tasted good. So, for a while I have been working on turning all my muffin recipes into healthier alternatives.
The best part, mine offers a sweetness without having to add processed sugar. So where does the sweet come from? I used honey, the perfect sidekick to fresh or frozen blueberries.
Why are they healthy? Take a run through some of the ingredients like oatmeal, honey, cinnamon, blueberries, coconut oil. Don't they just sound better?
Are you ready to try what I have come up with? These muffins are easy make; this batch will yield 12, using my favorite silicone cupcake liners.
Begin my
preheating your oven to 350 degrees.

Ingredients & Steps
- 1 cup oats
- 1 cup flour (I use oat flour)
- 1 tsp baking powder
- 2 tsp. cinnamon
- 1 Tbsp. vanilla
- 2 eggs
- ½ cup milk
- 1/ 2 cup honey
- ½ cup melted coconut oil
- 2 Tbsp. melted butter
- 1 cup of blueberries
In a large bowl begin with your dry ingredients and slowly
add everything else except for the blueberries. Mix with a wooden spoon or spatula until blended then add blueberries and lightly fold together quickly.
If you use frozen berries the mixture will thicken, nothing is wrong just keep moving forward by dropping batter to the rim of each silicone liner. Bake at
350 degrees for 25 to 30 minutes.
Let them cool
before removing from liners and store in a plastic container. For storage I have been using these amazing silicone reusable bags from SPLF. I love them!
These muffins are the perfect weekend treat or a great option for breakfast if you are in a hurry. I enjoy mine with a cup of coffee.
