Here in the south, the later part of fall is when we begin craving a good roast; this continues through early March.
This is a quick and
comforting meal that I can cook while doing a bunch of other
things. So, on my busy days I seek these easy to cook meals because they are the best.
This recipe uses my new winter spice blend and y’all it is good.
This blend comes mostly from the garden and let me say there is nothing better than homegrown herbs.
To begin we start with a crockpot on high for about a 2-hour cook or set on low for 4 hours.
Winter Spice Roast Ingredients and Prep
- 1.5 to 2lbs chunk roast
- 2 Tablespoons of Winter Spice Blend – Recipe here
- 2 Large potatoes chopped in bite size pieces
- 2/3 cup water
- 1 Tablespoon of butter
Prepare to Cook
Place water in the bottom of crockpot and then add the roast and potatoes. Sprinkle the winter spice blend and butter chunks over the top, cover and let it cook. When done serve and enjoy with a nice garden salad.I am finding that I can deliver a great dinner and get my work done at the same time and this meal is a great example. Give it a try and stay tuned because I will have more recipes coming using that winter spice blend.
Be the good,
Carole West
